Golda Chingri or Indian Scampi is a favourite among the Bengalis. Cultured in different estuaries across Andhra Pradesh and West Bengal, this freshwater Lobster is particularly sought after because of its big head as Bengali way of cooking is usually with the head on. The soft meat has a distinct flavour and little sweet in taste, if cooked perfectly, just melts in the mouth. The image showing here is of Macrobrachium rosenbergii or Golda Chingri |
