Paneer Masala or Spicy Indian Cottage Cheese is a recipe that is easy to make and goes well with Roti, Chapti or any other Indian bread.

Introduction: Paneer of Indian Cottage Cheese is the most commonly used vegan food of this sub continent. Paneer is considered as the vegan substitute of poultry, almost all the chicken dishes have the vegan version done with Paneer. This Classic North Indian Dish is widely popular in northern India and almost omnipresent in restaurants, dhabas and even grand feasts and dinners.
Paneer Masala Recipe:

Ingredients:
250gms Paneer or Cottage cheese, make 1 inch cubes
 3 Tablespoon Desi Ghee/ Cooking Oil
1 finely chopped Onion
1 cup fresh Tomato puree 
1 Tablespoon crushed Ginger and Garlic
2 finely chopped Green chillies,
1 Bay leaf
1 inch Cinnamon stick 
2-3 Green cardamoms
2-3 Cloves
1 Tablespoon Kashmiri Degi Mirch or Red Papprika powder 
1 Teaspoon Garam Masala powder 
Salt to taste
Instructions:
>Heat Oil or Ghee in an Kadai or Wok
>shallow fry the Paneer cubes till Golden Brown and set aside
>In a kadai, heat oil (you can use the same oil or ghee used for frying paneer), add bay leaf, Cinnamon, Green Cardamoms and Cloves.
>Add Onion and fry till translucent
>Add crushed ginger and garlic and sauté for few minutes, by now Onions should be golden brown
>Add chopped green chillies, salt and Garam Masala
>Add Tomato Puree and cook for another 2-3 minutes
>Add Kashmiri Degi Mirch Powder
>Sprinkle little water if the spices burn at the bottom of the wok
>Now add Paneer cubes and fold well in the spices mix.
>Add half cup warm water and let the curry simmer for 2-3 minutes
>Adjust salt and your curry is ready to serve
